9 Super Melty Sweet and Savoury S’mores

American s’mores are a fun, sweet stack, best enjoyed around an open fire. As they’re made from only three simple ingredients – marshmallows, chocolate and sweet crackers – they’re ripe for reinvention. So that’s exactly what we did…

If you’re not fully au fait with American cuisine, chances are you’ve never heard of a s’more. This super-saccharine, gastronomic curio is a short stack of marshmallow and chocolate, sandwiched by two graham crackers (a honey-based cracker sold in the US). And the name? Apparently, it’s short for ‘some more’. This is one seriously Stateside portmanteau.

As s’mores are traditionally toasted around an open fire, we started thinking of all the brilliant ways we could rework the blueprint for a good old fashioned British bonfire party (not to mention all those summertime camping trips). So, our resident s’more fiend, cookery writer Chelsie, took to the kitchen to create 10 makeover sweet and savoury stacks.

Cookie Base Classic S’mores

This three-ingredient s’more is as close to the true American version as we got. In lieu of graham crackers, Chelsie used chocolate chip cookies. If you wanted to go all out and make your own biscuits, our simple vintage chocolate chip cookies are ready in half an hour. But in the world of the s’more, a convenient off-the-shelf biscuit is a quite acceptable alternative.

Ingredients

    • 16 chocolate chip cookies
    • 8 marshmallows (vegetarian brand, if required)
    • 8 tsp chocolate hazelnut spread (we used Nutella)

Method

  1. Preheat the grill to high and line a baking sheet with parchment. Put 8 cookies on the tray and top with a marshmallow. Grill until the marshmallow begins to brown and melt.
  2. Put a tsp of chocolate hazelnut spread on the other 8 cookies and sandwich on top of the melty marshmallow layer.

Spicy Salami S’mores

While we’re on the subject of all things Italo-American, our salami s’more, with taleggio and olives, is another super-dippable sandwich of savoury flavours. Sturdy melba toasts make a good outer layer for s’mores thanks to their wide surface area, and if you want to eschew shop-bought, you can make your own using standard sliced bread.

    • 16 melba toasts
    • 8 slices Taleggio
    • 8 slices spicy salami
    • 4 black olives, halved

Method

      1. Preheat the grill to high and line a baking sheet with parchment. Put 8 melba toasts on the tray with a slice of Taleggio on each and grill until the cheese starts to melt.
      2. Top with the salami, a black olive and sandwich another melba toast on top.

Melty Ploughman’s S’mores

A classic British dish in s’more form? All that’s left to add is a hunk of pork pie on the side. Cream crackers are another winning choice for s’mores, as they’re compact and can handle being subjected to the heat of a flaming bonfire.

We took the classic cheese and pickle lunchtime combination and turned it into a savoury version of classic American marshmallow sandwich, the s’more

Ingredients

    • 16 cream crackers
    • 8 slices of brie (about 80g) (vegetarian brand, if required)
    • 4 tbsp pickle

Method

      1. Preheat the grill to high and line a baking sheet with parchment. Put 8 cream crackers on the baking sheet with a slice of Brie on each cracker. Grill until the cheese starts to melt.
      2. Put some pickle on top and sandwich with the other cracker until the cheese oozes out the sides.

Banoffee S’mores

Chocolate Hob Nobs sandwich the classic toffee and banana flavour combination in this ultra-sweet dessert s’more, with a traditional marshmallow melty layer added for good measure. Digestives or Rich Tea would work too.

    • 16 milk chocolate oat biscuits (we used Milk Chocolate Hobnobs)
    • 8 large marshmallows (vegetarian brand, if required)
    • 8 tsp dulce de leche
    • 1 banana, cut into 16 slices

Method

      1. Preheat the grill to high and line a baking sheet with parchment. Put 8 Hobnobs on the tray with a marshmallow on top and grill until slightly brown and melting.
      2. Put a tsp of dulce de leche on the remaining 8 Hobnobs and top with 2 banana slices. Sandwich the biscuits together.

5. Lemon Meringue Pie S’mores

Proving the flexibility of s’mores, this citrus version uses shortbread rounds as the outer layer. Any jam or spread could be used in place of curd, or try a different flavour – our homemade passion fruit curd would turn things a touch tropical.

6.Pumpkin Pie S’mores

Two classic American sweets become one in our autumnal pumpkin pie s’mores. Canned pumpkin puree is a great cheat’s ingredient, as it bypasses the need to deal with a whole, fresh gourd. You’ll find it in cans, usually imported from the US.

    • 16 ginger nut biscuits
    • 8 marshmallows (vegetarian brand, if required)
    • 8 tsp canned pumpkin purée
    • ¼ tsp cinnamon

Method

    • Preheat the grill to high and line a baking sheet with parchment. Put 8 ginger nuts on the tray and top with a marshmallow. Grill until the marshmallow is turning brown and melty.
    • Mix the pumpkin puree with the cinnamon and put a tsp on each of the remaining ginger nuts.
    • Sandwich both together until oozing.

    • 16 Ritz crackers
    • 8 slices mozzarella (½ a ball) (vegetarian brand, if required)
    • 8 sundried tomatoes
    • 8 fresh basil leaves

Method

    • Preheat the grill to a high heat. Line a baking sheet with parchment and put 8 ritz crackers on top with a slice of mozzarella on each. Grill for 1 min until the cheese starts to melt.
    • Top with a sundried tomato and a basil leaf and sandwich another Ritz cracker on top.

8. Cheese & Bacon S’mores

It’s back to the opposite side of the Atlantic for our bacon & camembert s’mores, made with Ritz crackers and extra-melty camembert cheese. We recommend them served with a generous dollop of cranberry sauce or fruity chutney on the side.

Ingredients

    • ½ tbsp olive oil
    • 2 rashers of streaky bacon
    • 16 Ritz crackers
    • 8 slices of camembert (vegetarian brand, if required)

Method

    • Preheat the grill to high and line a baking sheet with parchment. Heat the oil in a non-stick frying pan over a medium heat and fry the bacon until golden and crisp. Set aside on kitchen towel.
    • Meanwhile, put 8 Ritz crackers on the baking sheet topped with a slice of camembert. Once the bacon has cooked, put the crackers under the grill for a min until the cheese melts.
    • Using kitchen scissors, snip the bacon into 8 pieces and put on top of the cheesy Ritz cracker. Sandwich another Ritz on top.

Salted Caramel & Peanut Butter S’mores

Could this be one of the greatest flavour combinations of all time? The waffle biscuits add an extra element of caramel goodness, plus we used all-American peanut butter cups for extra Stateside kudos.

    • 8 peanut butter cups
    • 8 tsp caramel (we used Carnation)
    • sea salt flakes, for sprinkling

Method

    • Preheat the grill to high and line a baking sheet with parchment. Put 8 waffle biscuits on the tray with a peanut butter cup on each and grill until it starts melting.
    • Put a tsp of caramel on the other 8 waffles and sprinkle a few salt flakes over each.
    • Sandwich the waffle biscuits together and enjoy with a cappuccino.
